{"id":2070,"date":"2026-07-06T13:13:11","date_gmt":"2026-07-06T17:13:11","guid":{"rendered":"https:\/\/jerrykuntz.org\/harryhill\/?p=2070"},"modified":"2026-07-06T13:13:16","modified_gmt":"2026-07-06T17:13:16","slug":"butchers-and-blood-sports-published-october-5-1884","status":"publish","type":"post","link":"https:\/\/jerrykuntz.org\/harryhill\/butchers-and-blood-sports-published-october-5-1884\/","title":{"rendered":"Butchers and Blood Sports [published October 5, 1884]"},"content":{"rendered":"\n<figure class=\"wp-block-image aligncenter size-full is-resized\"><img loading=\"lazy\" decoding=\"async\" width=\"287\" height=\"206\" src=\"https:\/\/i0.wp.com\/jerrykuntz.org\/harryhill\/wp-content\/uploads\/2026\/07\/badger.jpg?fit=287%2C206&amp;ssl=1\" alt=\"\" class=\"wp-image-2072\" style=\"width:163px;height:auto\"\/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; I met old Deaves, the butcher, with his bulldog, the other day (I never remember meeting Deaves without also simultaneously meetin\u2019 his bulldog), and the old fellow got talkin\u2019 about old times, and especially about the times the butchers used to have trainin\u2019 their bulldogs and baitin\u2019 bulls and bears, not in Wall street, but in the \u201carena\u201d as the high-toned butchers delighted to call it, the \u201carena\u201d over in Williamsburg.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; This \u201carena,\u201d or bull and bear baitin\u2019 pit, was got up by a joint stock company of the boss butchers, and unlike most joint stock companies, its financial affairs, though limited in amount, were honestly kept in account, and there was somethin\u2019 to represent the money which its stock originally cost. Among the members of this \u201ccompany\u201d were the Perins, DeForest, the Hills, the Mooks, the Conklins, Scott, Davenport and other progenitors of well-known butcher families.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; They used to meet every fine Wednesday afternoon, and after a social drink all around, would devote \u2018emselves heart and soul to \u201cimprovin\u2019 the breed of bulldogs,\u201d as they termed it, a laudable object which they accomplished by settin\u2019 their dogs at the bears and bulls, the best and bloodiest dog in the baitin\u2019 gettin\u2019, or his owner gettin\u2019 for him, a prize consistin\u2019 of a silver collar for the dog, or some silver dollars for the owner, the latter preferred .<\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" width=\"1373\" height=\"929\" src=\"https:\/\/i0.wp.com\/jerrykuntz.org\/harryhill\/wp-content\/uploads\/2026\/07\/NSGB1903PL50228-Copy.jpg?fit=640%2C433&amp;ssl=1\" alt=\"\" class=\"wp-image-2073\" style=\"aspect-ratio:1.4779652318942844;width:563px;height:auto\" srcset=\"https:\/\/i0.wp.com\/jerrykuntz.org\/harryhill\/wp-content\/uploads\/2026\/07\/NSGB1903PL50228-Copy.jpg?w=1373&amp;ssl=1 1373w, https:\/\/i0.wp.com\/jerrykuntz.org\/harryhill\/wp-content\/uploads\/2026\/07\/NSGB1903PL50228-Copy.jpg?resize=300%2C203&amp;ssl=1 300w, https:\/\/i0.wp.com\/jerrykuntz.org\/harryhill\/wp-content\/uploads\/2026\/07\/NSGB1903PL50228-Copy.jpg?resize=1024%2C693&amp;ssl=1 1024w, https:\/\/i0.wp.com\/jerrykuntz.org\/harryhill\/wp-content\/uploads\/2026\/07\/NSGB1903PL50228-Copy.jpg?resize=768%2C520&amp;ssl=1 768w, https:\/\/i0.wp.com\/jerrykuntz.org\/harryhill\/wp-content\/uploads\/2026\/07\/NSGB1903PL50228-Copy.jpg?w=1280&amp;ssl=1 1280w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; The \u201carena\u201d was about two hundred feet square, built with a strong fence twelve or fourteen feet high all around it. There was a platform built extendin\u2019 along the inside of the fence for the accommodation of the spectators. Under this platform were the kennels for the dogs. In the center of the ring was a pole, securely fastened, to which, in turn, would be securely fastened the bull or bear it was desired to \u201cbait\u201d or badger, for the sake of \u201cimprovin\u2019 the breed of bulldogs.\u201d<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; The \u201cring\u201d itself was about a hundred feet in diameter and was enclosed by a second strong fence about four feet high, the pole in the center being made of hickory wood, and projectin\u2019 about eight inches above the ground, and to it was attached a strong iron ring, to which the rope holding the bull or bear was tied. There was generally allowed about forty feet of rope, so that there was room enough for the bull or bear to move about and to make things lively for the dogs, while improving their breed.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; Joe Conklin, the butcher, acted as general manager of the sports of the arena, and like a smart man, generally appointed somebody else to do the work of the position under the title of \u201cassistant,\u201d while he himself got all the honor and glory of the office. He was the only man in office in ancient or modern times whoever did this sort of thing (!).<\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"455\" height=\"316\" src=\"https:\/\/i0.wp.com\/jerrykuntz.org\/harryhill\/wp-content\/uploads\/2026\/07\/bearbaiting.jpg?fit=455%2C316&amp;ssl=1\" alt=\"\" class=\"wp-image-2074\" srcset=\"https:\/\/i0.wp.com\/jerrykuntz.org\/harryhill\/wp-content\/uploads\/2026\/07\/bearbaiting.jpg?w=455&amp;ssl=1 455w, https:\/\/i0.wp.com\/jerrykuntz.org\/harryhill\/wp-content\/uploads\/2026\/07\/bearbaiting.jpg?resize=300%2C208&amp;ssl=1 300w\" sizes=\"auto, (max-width: 455px) 100vw, 455px\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; Conklin had another smart habit. Whenever there was no special danger he would \u201chandle\u201d the dogs, as it was called, set \u2018em on the bull or bear; but when the bull or bear was particularly fierce, why, then, \u201cevery man handle his own dog\u201d was the rule.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; Not that Joe Conklin was a coward, far from it, as will be shown presently, but like a sensible man, he didn&#8217;t court danger when it could possibly be, with honor and without loss, avoided or put on somebody else.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; Judges bein\u2019 selected, and umpires, etc., the sports of the arena, or the improvin\u2019 of the breed of bulldogs, would commence, to the vast delight of the butchers and of such of their apprentices who, as a special favor, were allowed to witness the excitin\u2019 and instructive proceedin\u2019s.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; The bull would be brought in and tied up, and then the dogs would be set loose.<\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-full is-resized\"><img loading=\"lazy\" decoding=\"async\" width=\"634\" height=\"600\" src=\"https:\/\/i0.wp.com\/jerrykuntz.org\/harryhill\/wp-content\/uploads\/2026\/07\/Bull_and_Bear_Fight_New_Orleans_1853.jpg?fit=634%2C600&amp;ssl=1\" alt=\"\" class=\"wp-image-2075\" style=\"width:422px;height:auto\" srcset=\"https:\/\/i0.wp.com\/jerrykuntz.org\/harryhill\/wp-content\/uploads\/2026\/07\/Bull_and_Bear_Fight_New_Orleans_1853.jpg?w=634&amp;ssl=1 634w, https:\/\/i0.wp.com\/jerrykuntz.org\/harryhill\/wp-content\/uploads\/2026\/07\/Bull_and_Bear_Fight_New_Orleans_1853.jpg?resize=300%2C284&amp;ssl=1 300w\" sizes=\"auto, (max-width: 634px) 100vw, 634px\" \/><figcaption class=\"wp-element-caption\">Bull vs. bear circa 1853<\/figcaption><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; A dog, if he was \u201ca good \u2018un\u201d and well-trained, would crouch close to the ground and work himself up slowly to the bull, then would make a spring and seize the bull, either by the nose or under jaw. Then the circus, or the school for trainin\u2019, would commence. At any rate, the fight would begin, and a very excitin\u2019 and edifyin\u2019 fight it generally proved to be. It was hold on dog and throw off bull. While the bets would sometimes be on the dog and sometimes on the bull; as there were more dogs than bulls, the dogs usually got the best of it, till, wearied of the fun, or trainin\u2019, the bull would be led away and the dogs called off.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; Sometimes it would be difficult and dangerous work to separate the combatants. The dog and the bull would be about as close as man and wife, and it was as unsafe to interfere between them as it was to take part in a family row.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; Occasionally the bull would save the Butchers the trouble of takin\u2019 off the dog by hurlin\u2019 the dog himself fifteen or twenty feet in the air, and over the ring fence.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; Two bulls and a bear would generally be baited in the course of an afternoon\u2019s sport or trainin\u2019. In baitin\u2019 a bear two or three dogs would generally be set on the bear at once, and even then the bear would generally quit winner.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; This series of instructive sport was kept up for several years; then at last public opinion sat down on it. Not on account of any Henry Bergh ideas\u2013they were not heard of then\u2013but on account of two serious accidents which took place.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; A tavern keeper in Williamsburg who kept a bear for the use of the arena heard complaints that his bear was gettin\u2019 too fat, too lazy and too tame to do any fightin\u2019. So he determined to feed him less, to make him fiercer and not to feed him to the day of the baitin\u2019 at all.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; Now there was a smart little colored boy who had charge of the bear, who was kept down in the cellar of the tavern chained all the time\u2013the bear I mean of course, not the boy. One day the boy was sent downstairs to lead out the bear to the arena. He went down lively enough into the cellar, but never came out of the cellar alive. As soon as he was loosened the hungry bear rushed on the poor little boy, mangled him and commenced eatin\u2019 him alive. His agonizin\u2019 screams of course brought instant assistance, but his rescuers arrived too late. Ere the bear could be beaten off the boy was dead.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; This terrible affair put an end to \u201cthe arena\u201d in Williamsburg. But bull baitin\u2019 was revived a year later in New York, at John Armstrong&#8217;s place on Third avenue. It had big success for a while, and then an affair occurred which stopped it at once and forever.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; Joe Conklin was handling one of his own dogs in a fight with a very ferocious bull; the spectators warned him out of the ring, but he wouldn&#8217;t heed the warnin\u2019. Suddenly the bull got loose and went for Joe Conklin. Full of pluck, now that he was in for it, findin\u2019 he couldn&#8217;t escape, Conklin fought the mad bull for awhile as bravely as any bulldog, but received a fearful gash in the side which rendered him a cripple for life.
